The Process of Making Vanilla: From Cultivation to Harvest

Vanilla comes from the vanilla orchid, a plant that grows in hot, humid tropical climates, between 20 and 30°C. This vine can climb up to 1000 meters in altitude. To protect itself from the sun, it hides in the undergrowth. Pollination is a meticulous and delicate process. Producers must manually pollinate the flowers during their three-month blooming period. Although some bees participate in pollination, their role remains secondary. After pollination, it takes nine months for the pods to reach maturity.

Key Stages of Vanilla Production: Blanching and Curing

Once harvested, the pods are still green and scentless. They must undergo a long manufacturing process before developing their unique aroma.

  • Blanching: The vanilla pods are dipped in hot water to prevent them from opening prematurely.
  • Curing: Next, they are kept in boxes covered with blankets for 12 to 14 hours. This step allows the vanilla to acquire its characteristic brown color.
  • Sun Drying: Afterward, the pods are sun-dried for several days, usually 3 hours a day. This step helps concentrate the vanilla’s aromas.
  • Shade Drying: Then, the pods are placed in the shade to slow down the drying process. This takes between one to two months, and the pods lose up to 60% of their water content.
  • Aging: Finally, the pods are placed in chests for four months. This last process allows the pods to continue developing their aromas while preventing excess moisture.
